Rocky Road
This recipe is one of my all-time favourites, whether it be after tea, a snack in my lunch box or a treat before bed, it is a not only delicious but also super easy make. This makes approximately 8 portions!
1. Get half a packet of digestives (approximately 12 biscuits or 100g) and crush them in a bowl down to smaller chunks
2. Poor in approximately 100g of marshmallows into the bowl
3. In a pan, place 2 tablespoons of golden syrup, 200g of chocolate (my personal favourite is dark chocolate, but any chocolate will work), and a wad of butter (approximately 50g)
4. Melt these together over a low heat, stirring continually until all the chocolate has melted
5. Pour the chocolate sauce into the bowl and mix the ingredients together
6. Extras can be added at this point – such as walnust, cherries?
7. Then place the rocky road in a storage container or ceramic dish covered in baking paper
8. Leave in the fridge until it is set and firm
